Rainbow Dip

Ingredients:

  • 1.5 cups organic pinto or black bean mash
  • 1 cup of organic, cultured sour cream or piima cream
  • 3 mashed organic avocados with the juice of 1 lime
  • 10 organic cherry tomatoes cut into fours or bite size pieces
  • 1/2 cup of shredded raw cheddar cheese
  • 1 cup of finely chopped organic lettuce

On a serving dish, layer each ingredient starting with the bean mash and topping off with lettuce.
Of course use your child’s favorite vegetable toppings.
Adults eat with chips, and the babies, by the spoonful, YUM!
