Sweet Potato Coconut Pears

2 large sweet potatoes

3 medium pears, peeled, cored and cut up

1 tbsp coconut oil

  1. Bake sweet potatoes in 375 degree oven for one hour or until very soft
  2. Allow sweet potatoes to cool and peel off skins
  3. Steam pears in 1/4 cup water for 8 minutes or until soft
  4. Puree all ingredients in a food processor until smooth or desired consistency

I love eating this and so does Cori who’s well beyond the baby food stage at 2 1/2 years old!
